Recreate a delicious Chicken Teriyaki Bowl at home with tender chicken, vibrant veggies, and a savory sauce served over fluffy rice.

- 1 large chicken breast (about 8 oz), cubed
- 1 tbsp olive oil
- 1/2 cup carrots, sliced
- 1 cup broccoli, chopped
- 1 tsp garlic powder
- 1/2 tsp salt
- 1 cup brown or white rice
- Sesame seeds, for topping
- Green onions, chopped, for topping
- 1/2 cup water (for sauce)
- 1/2 tsp sesame oil
- 2 tbsp brown sugar or coconut sugar
- 1/4 cup soy sauce or coconut aminos
- 1 tsp honey
- 1 garlic clove, minced
- 1/2 tsp ginger paste or fresh ginger, minced
- 1 tbsp cornstarch
- 2 tbsp water (for cornstarch slurry)
Instructions
- Start by cooking the rice according to package directions. While the rice cooks, you can prepare the rest of the dish.
- Heat 1/2 tablespoon of olive oil in a large pan over medium heat. Add the sliced carrots and chopped broccoli. Season with garlic powder and salt. Cook for about 5 minutes until the veggies are tender and cooked through. Once done, remove them from the pan and set them aside.
- In the same pan, heat the remaining 1/2 tablespoon of olive oil.
- Add the cubed chicken breast to the hot pan. Let the chicken cook for 3 minutes on one side without moving it too much.
- After 3 minutes, flip the chicken pieces over and cook for another 3 minutes until both sides are browned.
- While the chicken cooks, mix together all the ingredients for the teriyaki sauce in a bowl: water, sesame oil, brown sugar, soy sauce, honey, minced garlic, and ginger paste.
- Once the chicken is cooked through, pour the teriyaki sauce (including the cornstarch slurry) into the pan with the chicken. Allow it to cook for another couple of minutes until the sauce thickens.
- Assemble your bowl with the rice, veggies, and chicken teriyaki. Finish with a sprinkle of sesame seeds and chopped green onions. Serve warm and enjoy!
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. This recipe is versatile; feel free to customize the veggies or protein.
