Description
Elegant yet easy, this Chicken Stuffed with Pears and Cheese combines juicy chicken breasts with sweet, tender pears and creamy melted cheese the perfect balance of savory and sweet for any special dinner.
Ingredients
4 boneless, skinless chicken breasts
2 ripe pears, peeled and thinly sliced
3/4 cup shredded mozzarella or fontina cheese (or crumbled blue cheese for a bolder flavor)
1 tbsp olive oil
1 tbsp butter
Salt and pepper to taste
1/2 tsp dried thyme or 1 tsp fresh thyme leaves
1/4 cup chicken broth
1 tbsp honey or balsamic glaze (optional, for drizzling)
Instructions
1. Preheat oven to 375°F (190°C).
2. Carefully butterfly each chicken breast by slicing horizontally to create a pocket (don’t cut all the way through).
3. Season the inside and outside of each chicken breast with salt, pepper, and thyme.
4. Stuff each breast with pear slices and cheese, then secure with toothpicks if needed.
5. In an oven-safe skillet, heat olive oil and butter over medium heat.
6. Sear stuffed chicken on both sides until golden brown, about 2–3 minutes per side.
7. Add chicken broth to the skillet and transfer to the oven.
8. Bake for 15–20 minutes, or until chicken is cooked through (internal temp 165°F / 74°C).
9. Drizzle with honey or balsamic glaze before serving.
Notes
Try blue cheese or gorgonzola for a gourmet twist.
Delicious served with wild rice, roasted vegetables, or a simple salad.
Substitute pears with apples for a seasonal variation.
