Ingredients

  • 2 Chicken breasts or thighs
  • 8 Corn tortillas
  • 1 Onion, diced
  • 1/2 cup Cilantro, chopped
  • 1 Lime, cut into wedges
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • 1 tsp Salt
  • 1/2 tsp Pepper

Instructions

  1. Combine olive oil, minced garlic, cumin, chili powder, salt, and pepper in a medium bowl.
  2. Add the chicken to the marinade, ensuring it is well coated.
  3. Let the chicken marinate for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Grill the marinated chicken for 6-7 minutes on each side or until fully cooked.
  6. Remove the chicken from the grill and let it rest for a few minutes.
  7. Warm the corn tortillas on the grill for a few seconds on each side.
  8. Slice the grilled chicken and assemble tacos with chicken, diced onion, and chopped cilantro.
  9. Squeeze fresh lime juice over the tacos before serving.
