Ingredients

  • 8 spring roll wrappers
  • 1 cup cooked chicken, shredded
  • 1 cup mixed vegetables (carrots, bell peppers, cabbage)
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Oil for frying
  • Dipping sauce of choice (e.g., sweet chili sauce)

Instructions

  1. In a bowl, mix together the cooked chicken, mixed vegetables, green onions, soy sauce, garlic, and ginger.
  2. Lay a spring roll wrapper flat and place a few tablespoons of the chicken mixture on it.
  3. Roll the wrapper tightly, folding in the sides to secure the filling.
  4. Repeat with remaining wrappers and filling.
  5. Heat oil in a frying pan over medium heat. Fry the spring rolls until golden brown and crispy.
  6. Drain on paper towels and serve hot with a dipping sauce.

Notes

Don’t overfill the wrappers and ensure the oil is hot enough to prevent sogginess.
