- 8 spring roll wrappers
- 1 cup cooked chicken, shredded
- 1 cup mixed vegetables (carrots, bell peppers, cabbage)
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Oil for frying
- Dipping sauce of choice (e.g., sweet chili sauce)
Instructions
- In a bowl, mix together the cooked chicken, mixed vegetables, green onions, soy sauce, garlic, and ginger.
- Lay a spring roll wrapper flat and place a few tablespoons of the chicken mixture on it.
- Roll the wrapper tightly, folding in the sides to secure the filling.
- Repeat with remaining wrappers and filling.
- Heat oil in a frying pan over medium heat. Fry the spring rolls until golden brown and crispy.
- Drain on paper towels and serve hot with a dipping sauce.
Notes
Don’t overfill the wrappers and ensure the oil is hot enough to prevent sogginess.
