This Easy Zesty Southwest Chicken Salad Bowl is bursting with bold, smoky flavors and crisp veggies, perfect for fast weeknight dinners.
Ingredients
2 boneless skinless chicken breasts or thighs
1 tbsp olive oil
1 tsp cumin
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Juice of 1 lime
Salt and pepper to taste
2 cups chopped romaine or spinach
1/2 cup canned corn, drained
1/2 cup black beans, drained and rinsed
1 avocado, sliced
1/2 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
Fresh cilantro for garnish
Instructions
1. Combine olive oil, spices, lime juice, salt, and pepper. Marinate chicken for 15 minutes.
2. Preheat grill or skillet to medium-high heat.
3. Cook chicken 5–7 minutes per side until fully cooked (165°F internal temp).
4. Let chicken rest 5 minutes, then slice.
5. Assemble salad: greens, corn, beans, tomato, onion, avocado.
6. Top with sliced chicken and fresh cilantro.
7. Drizzle with extra lime juice or dressing of choice.
Notes
You can swap chicken for turkey or tofu.
Store leftovers in airtight containers for up to 3 days.
