Description
Chicken Ranch Pasta Salad is creamy, tangy, and loaded with BBQ chicken, veggies, and cheese perfect for summer potlucks or weekday meals.
Ingredients
8 oz rotini pasta
2 cups cooked chicken (grilled or shredded)
½ cup corn kernels
1 cup cherry tomatoes, halved
¼ red onion, sliced
½ cup shredded cheddar cheese
½ cup ranch dressing
¼ cup BBQ sauce
Salt and pepper to taste
Instructions
1. Cook pasta until al dente, then rinse and drain.
2. Grill or prepare chicken; dice into chunks.
3. Mix pasta, chicken, veggies, and cheese in a large bowl.
4. Whisk together ranch and BBQ sauce in a small bowl.
5. Pour dressing over salad and toss to coat.
6. Chill for 30+ minutes before serving.
Notes
Add jalapeños for a spicy kick.
Store in fridge up to 4 days.
