This Chicken Mushroom Pot Pie is the ultimate comfort food a creamy, savory filling packed with tender chicken, earthy mushrooms, and vegetables, all baked under a buttery golden crust.
Ingredients
2 cups cooked chicken, shredded or diced
2 tbsp olive oil
1 tbsp butter
1 small onion, chopped
2 garlic cloves, minced
2 cups mushrooms, sliced
1 cup carrots, diced
1/2 cup peas
1/4 cup all-purpose flour
2 cups chicken broth
1/2 cup heavy cream or milk
1/2 tsp dried thyme
Salt and pepper to taste
1 sheet puff pastry or pie crust
1 egg, beaten (for egg wash)
Instructions
1. Preheat oven to 400°F (200°C).
2. In a large skillet, heat olive oil and butter over medium heat. Add onions and garlic; sauté until softened.
3. Add mushrooms and carrots; cook until tender and lightly browned.
4. Stir in flour and cook for 1 minute to form a roux.
5. Gradually pour in chicken broth, stirring until thickened.
6. Add cream, thyme, salt, and pepper; simmer for 2–3 minutes.
7. Stir in cooked chicken and peas; remove from heat.
8. Transfer mixture into a baking dish or ramekins.
9. Top with puff pastry or pie crust, sealing edges and cutting small slits for steam.
10. Brush with egg wash and bake for 25–30 minutes, until golden and bubbling.
11. Cool slightly before serving.
Notes
For an herby twist, add fresh rosemary or parsley.
Use leftover rotisserie chicken for an easy shortcut.
Can be made in advance — refrigerate and bake before serving.
