- 3–4 boneless, skinless chicken breasts
- Lo Mein noodles (fresh or dried)
- 1 red bell pepper
- 1 yellow bell pepper
- 2 carrots (thinly sliced)
- 2 green onions (chopped)
- ¼ cup low-sodium soy sauce
- 1 tablespoon sesame oil
- 3 cloves fresh minced garlic
Instructions
- Gather all your ingredients. Chop the vegetables into bite-sized pieces, making everything easy to handle.
- Cook the Lo Mein noodles according to the package instructions until they are al dente, drain them, and set aside.
- Heat your large skillet or wok over medium-high heat. Add a splash of oil and sauté the chicken until it turns golden brown and is fully cooked, which should take about 6-8 minutes. When done, remove the chicken from the skillet and set it aside.
- Toss in your bell peppers, carrots, and green onions. Stir-fry them for about 3-4 minutes until they are tender yet still crisp.
- Return the cooked chicken to the skillet, then add in the cooked Lo Mein noodles, soy sauce, sesame oil, minced garlic, and any additional spices you want to use. Toss everything together until it’s well mixed.
- Serve the Chicken Lo Mein hot, with extra soy sauce on the side if desired.
Notes
For best results, do not overcook the noodles and ensure your vegetables are stir-fried over high heat to maintain their crispness.
