Ingredients

  • 68 thin sliced chicken breasts
  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 1/2 cup buttermilk
  • 1 egg
  • 1 Tbs hot sauce
  • Oil for frying
  • 1/4 cup reserved oil from frying
  • 1/3 cup flour (for gravy)
  • 2 cups milk
  • Salt and pepper (to taste)

Instructions

  1. Heat the oil in your deep fryer or large pan to about 325°F.
  2. Whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder in a large bowl.
  3. Mix buttermilk, egg, and hot sauce in another bowl until well combined.
  4. Dredge each chicken breast in the flour mixture, then dip it into the egg mixture, and return to the flour mixture.
  5. Place the coated chicken in the pan or deep fryer and fry on each side for about 3-5 minutes until golden brown.
  6. Remove from oil and let drain on paper towel-lined plate.
  7. Heat 1/4 inch of reserved oil in a large pan and stir in reserved flour until absorbed.
  8. Slowly add in milk while whisking until gravy thickens; add salt and pepper to taste.
  9. Pour the gravy over each piece of chicken before serving.

Notes

Serve with classic sides like mashed potatoes, coleslaw, or biscuits. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
