- 6–8 thin sliced chicken breasts
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 1/2 cup buttermilk
- 1 egg
- 1 Tbs hot sauce
- Oil for frying
- 1/4 cup reserved oil from frying
- 1/3 cup flour (for gravy)
- 2 cups milk
- Salt and pepper (to taste)
Instructions
- Heat the oil in your deep fryer or large pan to about 325°F.
- Whisk together flour, baking powder, baking soda, salt, pepper, and garlic powder in a large bowl.
- Mix buttermilk, egg, and hot sauce in another bowl until well combined.
- Dredge each chicken breast in the flour mixture, then dip it into the egg mixture, and return to the flour mixture.
- Place the coated chicken in the pan or deep fryer and fry on each side for about 3-5 minutes until golden brown.
- Remove from oil and let drain on paper towel-lined plate.
- Heat 1/4 inch of reserved oil in a large pan and stir in reserved flour until absorbed.
- Slowly add in milk while whisking until gravy thickens; add salt and pepper to taste.
- Pour the gravy over each piece of chicken before serving.
Notes
Serve with classic sides like mashed potatoes, coleslaw, or biscuits. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
