Description
Juicy grilled chicken infused with fresh chimichurri and served with creamy garlic sauce over your favorite base perfect for any meal.
Ingredients
4 boneless chicken thighs
1 cup parsley
3 garlic cloves
2 tbsp red onion
1/2 cup olive oil
2 tbsp apple cider vinegar
1 tsp dried oregano
Salt & pepper
1/2 cup Greek yogurt
2 garlic cloves (grated)
1 tbsp olive oil (for sauce)
Juice of 1/2 lemon
Instructions
1. Blend chimichurri ingredients until smooth.
2. Marinate chicken in chimichurri for at least 15 minutes.
3. Preheat grill to medium-high heat.
4. Grill chicken for 5–7 minutes on each side until 165°F inside.
5. Let rest for 5–7 minutes.
6. Mix garlic sauce ingredients until smooth.
7. Slice chicken and serve over rice with garlic sauce.
Notes
You can swap chicken for turkey thighs or beef strips.
For spicier flavor, add cayenne or chipotle to chimichurri.
