Description

A juicy Chicken Avocado Melt Sandwich layered with marinated chicken, creamy avocado, gooey cheese, and toasted bread. Easy and satisfying.


Ingredients

Scale

2 boneless chicken breasts or thighs

2 tbsp olive oil

1 tbsp lemon juice

1 tsp garlic powder

1/2 tsp smoked paprika

Salt & pepper

1 ripe avocado, sliced

4 slices sourdough or ciabatta

2 slices mozzarella or provolone cheese

Lettuce or spinach

Butter or oil for grilling


Instructions

1. Marinate chicken in oil, lemon juice, garlic, paprika, salt and pepper.

2. Let sit for 15–30 minutes.

3. Preheat skillet or grill over medium-high heat.

4. Cook chicken 4–5 minutes per side until golden and done.

5. Toast bread lightly in skillet.

6. Assemble sandwich: bread, chicken, cheese, avocado, lettuce.

7. Return sandwich to skillet and press lightly.

8. Grill both sides until cheese is melted and bread is crisp.

Notes

Use turkey breast or portobello mushrooms as alternatives.

Add jalapeños or chipotle mayo for heat.
