Description
Cheesy Smashed Potatoes are crispy on the outside, fluffy inside, and topped with gooey melted cheese. The ultimate comfort food side dish!
Ingredients
1 ½ lb baby potatoes
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt & black pepper, to taste
1 ½ cups shredded cheddar cheese
2 tbsp fresh parsley, chopped
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet.
2. Boil potatoes until fork-tender, about 15–20 minutes.
3. Drain and arrange potatoes on the baking sheet.
4. Smash each potato with a glass until flattened.
5. Drizzle with olive oil, season with garlic, paprika, salt, and pepper.
6. Roast for 20–25 minutes until golden and crispy.
7. Sprinkle cheese on top, bake another 5 minutes until melted.
8. Garnish with parsley and serve hot.
Notes
Use Yukon Golds or red potatoes for best results.
For a spicier kick, add cayenne pepper or jalapeños.
Reheat leftovers in the oven for crispiness.
