Description
Cheesy Mashed Potato Puff Bites golden, fluffy, and crispy-on-the-outside mini bites made from mashed potatoes, cheese, and eggs. The perfect appetizer, side dish, or way to use up leftover mashed potatoes!
Ingredients
2 cups mashed potatoes (leftover or freshly made)
1 cup shredded cheddar cheese (or cheese blend)
2 large eggs, beaten
1/4 cup grated Parmesan cheese
2 tbsp chopped chives or green onions
Salt and black pepper, to taste
1/4 tsp garlic powder (optional)
Butter or nonstick spray, for greasing muffin tin
Sour cream, for serving (optional)
Instructions
1. Preheat oven to 400°F (200°C). Lightly grease a mini muffin tin with butter or nonstick spray.
2. In a large bowl, mix together mashed potatoes, cheddar, eggs, Parmesan, chives, salt, pepper, and garlic powder until well combined.
3. Scoop the mixture into the mini muffin cups, filling each about 3/4 full.
4. Bake for 20–25 minutes, or until puffed, golden brown, and slightly crispy on top.
5. Let cool for 5 minutes before removing from the pan.
6. Serve warm with sour cream or your favorite dipping sauce.
Notes
Use cold leftover mashed potatoes — they hold their shape better.
Try adding crumbled bacon, jalapeños, or caramelized onions for fun variations.
These reheat perfectly in the oven or air fryer.
Freeze after baking and reheat at 375°F (190°C) for 10 minutes for a quick snack.
