These Cheesecake Stuffed Chocolate Cupcakes are moist, rich, and filled with a creamy cheesecake center. Perfect for birthdays, bake sales, or indulgent snacking!
Ingredients
1 cup all-purpose flour
1/2 cup Dutch cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1 large egg
1/2 cup vegetable oil
1/2 cup buttermilk
1/2 cup hot water
1 tsp vanilla extract
Cheesecake Filling:
8 oz cream cheese, softened
1 egg yolk
1/4 cup sugar
1/2 tsp vanilla extract
1/2 cup mini chocolate chips (optional)
Instructions
1. Preheat oven to 350°F and line muffin tin with liners.
2. In one bowl, whisk flour, cocoa powder, baking soda, and salt.
3. In another bowl, mix sugar, egg, oil, buttermilk, hot water, and vanilla.
4. Combine wet and dry ingredients until just mixed.
5. In a third bowl, beat cream cheese, sugar, egg yolk, vanilla, and chocolate chips.
6. Fill each cupcake liner halfway with chocolate batter.
7. Add 1 tsp cheesecake filling to center, then top with more batter.
8. Bake for 18–22 minutes. Let cool before serving.
Notes
Use brick-style cream cheese for best texture.
Frost with chocolate ganache for extra indulgence.
Store refrigerated and serve at room temp or lightly warmed.
