Description
Creamy butterscotch cheesecake bars with a buttery graham cracker crust. Quick, easy, and perfect for dessert.
Ingredients
1 ½ cups graham cracker crumbs
½ cup melted butter
16 oz cream cheese, softened
½ cup sugar
2 large eggs
1 tsp vanilla extract
½ cup butterscotch chips
Optional: nuts or caramel drizzle
Instructions
1. Preheat oven to 350°F (175°C) and line 8×8-inch pan with parchment.
2. Mix graham cracker crumbs with melted butter and press into pan.
3. Beat cream cheese until smooth, add sugar, eggs, and vanilla.
4. Spread mixture over crust and sprinkle with butterscotch chips.
5. Bake 25–30 minutes until center is set.
6. Cool completely, chill 2 hours, then cut into bars.
7. Optional: drizzle with caramel or sprinkle with nuts before serving.
Notes
Store in airtight container up to 5 days.
Freeze individual bars for up to 2 months.
