- 2 cups cooked shredded chicken
- 1 cup queso cheese
- 8 corn tortillas
- 1 can enchilada sauce
- 1/2 cup diced onions
- 1/2 cup chopped cilantro
- 1 teaspoon ground cumin
- Salt to taste
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the filling: In a mixing bowl, toss together the shredded chicken, queso cheese, diced onions, ground cumin, and a pinch of salt.
- Warm the tortillas: Heat a skillet over medium heat and warm the corn tortillas until soft.
- Fill and roll: Spoon in some of the chicken mixture into a tortilla, roll it up, and place it seam-side down in a baking dish.
- Prepare for baking: Spread a layer of enchilada sauce on the bottom of the dish, then pour the remaining sauce over the rolled enchiladas.
- Add extra cheesiness: Sprinkle more queso cheese on top.
- Bake: Slide the baking dish into the oven and bake for 20-25 minutes.
- Garnish and serve: Remove from oven, sprinkle with chopped cilantro, and serve hot.
