Cheddar Garlic Herb Potato Soup is a creamy, cozy recipe full of flavor and perfect for family dinners.
Ingredients
2 lbs Yukon Gold potatoes, peeled & diced
1 cup shredded sharp cheddar cheese
4 cloves garlic, minced
3 tbsp butter
1 tbsp olive oil
4 cups vegetable broth
1 cup milk or cream
2 tbsp fresh parsley, chopped
1 tsp thyme
Salt & pepper to taste
Instructions
1. Heat butter and olive oil in a pot, sauté garlic and herbs.
2. Add diced potatoes and vegetable broth. Simmer 20 minutes.
3. Blend half the soup for creaminess.
4. Stir in milk and shredded cheddar until smooth.
5. Season with salt, pepper, and garnish with parsley.
Notes
You can substitute cauliflower for potatoes for a lighter version.
For extra spice, add chili flakes or cayenne.
