Ingredients
2 lbs carrots, peeled and cut into sticks or left whole if small
2 tbsp olive oil
2 tbsp honey
1/2 tsp salt
1/4 tsp black pepper
1 tsp fresh thyme or rosemary (optional)
1 tbsp butter (optional, for finishing)
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, whisk together olive oil, honey, salt, and pepper.
3. Add carrots and toss until evenly coated.
4. Spread carrots in a single layer on the baking sheet.
5. Roast for 25–30 minutes, stirring halfway through, until tender and lightly caramelized.
6. (Optional) Toss with a pat of butter and sprinkle with thyme or rosemary before serving.
Notes
For deeper flavor, drizzle with a bit of balsamic glaze before serving.
You can use rainbow carrots for a colorful presentation.
