Description
Carrot Cake Bliss Bombs are moist, spiced mini desserts topped with cream cheese glaze perfect for parties or snacks.
Ingredients
1½ cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1½ tsp ground cinnamon
½ tsp ground nutmeg
½ cup brown sugar
¼ cup granulated sugar
2 large eggs
⅓ cup vegetable oil
1 cup grated carrots
¼ cup unsweetened applesauce
½ cup chopped walnuts or pecans (optional)
½ tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and line mini muffin tin with liners.
2. Whisk together dry ingredients.
3. Beat eggs, sugars, oil, applesauce, and vanilla.
4. Fold wet ingredients into dry until just combined.
5. Fold in grated carrots and nuts.
6. Spoon batter into tins, ¾ full.
7. Bake 15–18 minutes until toothpick comes out clean.
8. Cool and frost with cream cheese glaze.
Notes
Store in airtight container for up to 3 days at room temp.
Freeze unfrosted bliss bombs for up to 2 months.
Add pineapple or coconut for flavor variations.
