- 2 cups of jasmine rice
- 4 chicken thighs (skinless)
- 1 can of coconut milk
- 2 cups of chicken broth
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 bell pepper, chopped
- 2 teaspoons of curry powder
- 1 teaspoon of paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat.
- Sauté the chopped onion, minced garlic, and chopped bell pepper until softened and fragrant (3-5 minutes).
- Brown the chicken thighs on both sides (5-7 minutes).
- Sprinkle in the curry powder, paprika, salt, and pepper, stirring to coat the chicken and vegetables.
- Add jasmine rice, coconut milk, and chicken broth, stirring well.
- Bring the mixture to a boil.
- Reduce heat to low, cover, and let it simmer until the rice is tender and chicken is cooked through (20-25 minutes).
- Let the dish rest for a few minutes before serving, garnished with fresh cilantro.
Notes
For best results, use jasmine rice and let the dish sit after cooking to absorb flavors.
