Description

Ingredients

  • 2 cups of jasmine rice
  • 4 chicken thighs (skinless)
  • 1 can of coconut milk
  • 2 cups of chicken broth
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 2 teaspoons of curry powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Sauté the chopped onion, minced garlic, and chopped bell pepper until softened and fragrant (3-5 minutes).
  3. Brown the chicken thighs on both sides (5-7 minutes).
  4. Sprinkle in the curry powder, paprika, salt, and pepper, stirring to coat the chicken and vegetables.
  5. Add jasmine rice, coconut milk, and chicken broth, stirring well.
  6. Bring the mixture to a boil.
  7. Reduce heat to low, cover, and let it simmer until the rice is tender and chicken is cooked through (20-25 minutes).
  8. Let the dish rest for a few minutes before serving, garnished with fresh cilantro.

Notes

For best results, use jasmine rice and let the dish sit after cooking to absorb flavors.
