Description
A savory-sweet tart with caramelized onions, roasted butternut squash, and a golden flaky crust. Perfect for brunch, dinner, or holiday tables.
Ingredients
1 sheet puff pastry or shortcrust pastry
2 medium yellow onions, thinly sliced
2 cups butternut squash, peeled & cubed
2 tbsp olive oil
1 clove garlic, minced
1 tsp fresh thyme
Salt & pepper to taste
1/2 cup crumbled feta or ricotta (optional)
Instructions
1. Preheat oven to 375°F (190°C).
2. Peel, cube, and roast butternut squash with olive oil, thyme, salt, and pepper for 20 minutes.
3. Caramelize onions in a skillet over low heat until golden and sweet.
4. Roll out pastry and place in tart pan. Blind bake for 10 minutes.
5. Layer onions, roasted squash, and cheese in tart shell.
6. Bake 25–30 minutes until crust is golden and filling set.
7. Cool 5 minutes before slicing and serving.
Notes
Make-ahead friendly: Bake and reheat before serving.
Substitute sweet potatoes for squash if preferred.
For vegan: omit cheese or use plant-based alternatives.
