Description

A golden, flaky puff pastry tart layered with sweet caramelized onions, roasted butternut squash, and creamy goat cheese an irresistible blend of flavors perfect for fall entertaining.


Ingredients

1 sheet puff pastry, thawed

2 cups butternut squash, peeled and cubed

2 tbsp olive oil

1 large yellow onion, thinly sliced

1 tsp fresh thyme leaves (or 1/2 tsp dried)

2 oz goat cheese, crumbled

1/4 cup grated Parmesan cheese

Salt and black pepper to taste

1 egg, beaten (for egg wash)

Optional: drizzle of honey or balsamic glaze for serving


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Toss cubed butternut squash with 1 tbsp olive oil, salt, and pepper. Roast for 20–25 minutes until tender and slightly golden.

3. Meanwhile, heat 1 tbsp olive oil in a skillet over medium heat. Add sliced onions and cook slowly for 20–25 minutes, stirring often, until caramelized and golden brown. Add thyme and season with salt and pepper.

4. On a lightly floured surface, roll out puff pastry slightly and place on the prepared baking sheet.

5. Brush edges with beaten egg and gently score a 1-inch border around the tart (without cutting through).

6. Spread caramelized onions evenly within the border, top with roasted squash, then sprinkle goat cheese and Parmesan over the top.

7. Bake for 20–25 minutes or until pastry is puffed and golden brown.

8. Optional: drizzle with honey or balsamic glaze before serving.

Notes

You can substitute goat cheese with feta or ricotta for a milder flavor.

Add a handful of arugula on top after baking for a fresh touch.

Best served warm or at room temperature — great for brunch or as a side dish.
