Description
Tender grilled chicken marinated in garlic and herbs, wrapped with crisp romaine lettuce, homemade Caesar dressing, and fresh Parmesan cheese in soft flour tortillas.
Ingredients
2 boneless, skinless chicken breasts (1 lb)
3 tablespoons olive oil
2 tablespoons fresh lemon juice
3 garlic cloves, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
4 large flour tortillas
2 cups romaine lettuce, chopped
1/2 cup Caesar dressing
1/3 cup fresh Parmesan cheese, grated
1/4 cup croutons, crushed
Instructions
1. Pound chicken to even 1/2-inch thickness using meat mallet.
2. Mix olive oil, lemon juice, garlic, oregano, salt, and pepper in bowl.
3. Marinate chicken in mixture for 15-30 minutes at room temperature.
4. Preheat grill or skillet to medium-high heat.
5. Grill chicken for 6-7 minutes per side until internal temperature reaches 165°F.
6. Let chicken rest for 5 minutes, then slice into thin strips against the grain.
7. Warm tortillas briefly in dry skillet or microwave for 30 seconds.
8. Spread 2 tablespoons Caesar dressing down center of each tortilla.
9. Add 1/2 cup chopped romaine lettuce to each tortilla.
10. Divide sliced chicken evenly among tortillas.
11. Sprinkle with Parmesan cheese and crushed croutons.
12. Roll tortillas tightly, tucking in ends, and secure with toothpicks if needed.
13. Serve immediately or wrap in foil for portable meals.
Notes
Don’t overcook chicken as it continues cooking from residual heat after removal from grill.
Assemble wraps just before serving to prevent sogginess.
Store cooked chicken separately from wrap components for up to 4 days.
Can substitute rotisserie chicken for quicker preparation.
