Description
All the comforting flavors of traditional cabbage rolls made easy in a hearty, one-pot soup rich tomato broth, tender cabbage, savory beef, and rice for the ultimate cozy meal.
Ingredients
1 lb (450g) ground beef
1 tbsp olive oil
1 medium onion, diced
3 garlic cloves, minced
4 cups chopped green cabbage
2 medium carrots, diced
1 cup uncooked white rice
1 can (28 oz / 800g) crushed tomatoes
1 can (14 oz / 400g) diced tomatoes
4 cups beef broth
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp smoked paprika
1 tsp dried thyme
Salt and black pepper, to taste
2 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Heat olive oil in a large soup pot or Dutch oven over medium-high heat.
2. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
3. Add diced onion and garlic, sautéing until fragrant and softened.
4. Stir in tomato paste, Worcestershire sauce, paprika, thyme, salt, and pepper.
5. Add chopped cabbage, carrots, crushed tomatoes, diced tomatoes, beef broth, and rice.
6. Stir to combine and bring to a boil.
7. Reduce heat to low, cover, and simmer for 25–30 minutes, stirring occasionally, until rice is tender and flavors are well combined.
8. Taste and adjust seasoning as needed.
9. Serve hot, garnished with fresh parsley.
Notes
For extra flavor, use a mix of beef and pork instead of just beef.
Substitute brown rice or quinoa for a healthier twist.
If the soup gets too thick, add more broth before serving.
This soup freezes beautifully — let it cool completely before storing in freezer-safe containers.
