These Butternut Squash Steak Bowls are the ultimate cozy-meets-hearty meal featuring caramelized roasted butternut squash, tender seared steak strips, and a garlicky herb sauce over a bed of grains or greens.
Ingredients
1 medium butternut squash, peeled and cubed
2 tbsp olive oil
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp pepper
1 lb flank or sirloin steak, thinly sliced
1 tbsp soy sauce
1 tbsp olive oil (for steak)
1 garlic clove, minced
2 cups cooked quinoa, farro, or brown rice
1 cup arugula or baby spinach
For the herb sauce:
2 tbsp olive oil
1 tbsp lemon juice
1 tbsp chopped parsley
1/2 tsp Dijon mustard
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and golden.
2. Meanwhile, season steak strips with soy sauce, garlic, and a pinch of pepper.
3. Heat olive oil in a skillet over medium-high heat. Sear steak for 2–3 minutes per side until browned and cooked to your liking. Set aside to rest.
4. In a small bowl, whisk together olive oil, lemon juice, parsley, Dijon mustard, salt, and pepper for the herb sauce.
5. Assemble bowls: start with quinoa or grains, add roasted squash, seared steak, and a handful of greens.
6. Drizzle with herb sauce and serve warm.
Notes
Swap steak for grilled chicken or tofu for a lighter option.
Add roasted chickpeas or feta for extra flavor and crunch.
