Description

A delicious and easy pasta dish featuring juicy chicken, fresh cherry tomatoes, and fragrant basil, perfect for weeknight dinners or family gatherings.


Ingredients

  • 8 oz pasta
  • 2 chicken breasts, diced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Parmesan cheese for topping (optional)

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside. Make sure to save a splash of pasta water just in case you need it later!
  2. Heat the olive oil over medium heat in a large skillet.
  3. Add the diced chicken to the skillet, season with salt and pepper, and cook until golden brown and cooked through.
  4. Stir in the minced garlic and allow it to cook for an additional minute.
  5. Toss in the halved cherry tomatoes and cook until they soften.
  6. Combine the cooked pasta with the chicken and tomato mixture, add the fresh basil, and adjust seasoning if necessary.
  7. Serve warm, topped with grated Parmesan cheese if desired.

Notes

Store leftovers in an airtight container for 3-4 days, or freeze for up to 2 months. Reheat by thawing in the fridge and warming in a skillet.
