- 8 oz pasta
- 2 chicken breasts, diced
- 2 cups cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- Parmesan cheese for topping (optional)
Instructions
- Cook the pasta according to package instructions, then drain and set aside. Make sure to save a splash of pasta water just in case you need it later!
- Heat the olive oil over medium heat in a large skillet.
- Add the diced chicken to the skillet, season with salt and pepper, and cook until golden brown and cooked through.
- Stir in the minced garlic and allow it to cook for an additional minute.
- Toss in the halved cherry tomatoes and cook until they soften.
- Combine the cooked pasta with the chicken and tomato mixture, add the fresh basil, and adjust seasoning if necessary.
- Serve warm, topped with grated Parmesan cheese if desired.
Notes
Store leftovers in an airtight container for 3-4 days, or freeze for up to 2 months. Reheat by thawing in the fridge and warming in a skillet.
