  • 2 tbsp apple cider vinegar
  • 2 tbsp honey or maple syrup
  • ½ tsp Dijon mustard
  • Pinch of salt and black pepper

Instructions

  1. Prep the vegetables and fruit: Start by washing and chopping the broccoli into small, bite-sized florets. Next, dice the apples. If you’d like, toss the apples with a bit of lemon juice to prevent browning.
  2. Mix the salad: In a large mixing bowl, combine the chopped broccoli, diced apples, shredded carrots, dried cranberries, sunflower seeds (or pecans), finely diced red onion, and shredded cheddar cheese if you’re feeling cheesy today.
  3. Make the dressing: In a small bowl or jar, whisk together the Greek yogurt (or your preferred base), apple cider vinegar, honey (or maple syrup), Dijon mustard, and a pinch of salt and pepper. Whisk until smooth.
