- ½ cup shredded carrots

- ½ cup shredded cheddar cheese (optional)
- ½ cup plain Greek yogurt (or mayo, or half and half)
- 2 tbsp apple cider vinegar
- 2 tbsp honey or maple syrup
- ½ tsp Dijon mustard
- Pinch of salt and black pepper
Instructions
- Prep the vegetables and fruit: Start by washing and chopping the broccoli into small, bite-sized florets. Next, dice the apples. If you’d like, toss the apples with a bit of lemon juice to prevent browning.
- Mix the salad: In a large mixing bowl, combine the chopped broccoli, diced apples, shredded carrots, dried cranberries, sunflower seeds (or pecans), finely diced red onion, and shredded cheddar cheese if you’re feeling cheesy today.
- Make the dressing: In a small bowl or jar, whisk together the Greek yogurt (or your preferred base), apple cider vinegar, honey (or maple syrup), Dijon mustard, and a pinch of salt and pepper. Whisk until smooth.
- Combine: Pour the dressing over the salad mixture and toss everything together until well coated.
- Chill & serve: Serve immediately or refrigerate for about 30 minutes to allow flavors to meld.
