Description
Mini-sized, fluffy Breakfast Pancake Poppers filled with berries, chocolate chips, or fruit perfect for meal prep and family mornings.
Ingredients
1 cup all-purpose flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup buttermilk
1 egg
2 tbsp melted butter
1/2 tsp vanilla extract
Optional: 1/2 cup mix-ins like blueberries or chocolate chips
Instructions
1. Preheat oven to 375°F and grease mini muffin pan.
2. Whisk dry ingredients in one bowl.
3. Whisk wet ingredients in another bowl.
4. Combine wet and dry mixtures gently.
5. Fold in mix-ins.
6. Spoon batter into muffin wells 3/4 full.
7. Bake 10–12 minutes until golden.
8. Cool 5 minutes and serve warm.
Notes
Freeze leftovers for up to 1 month.
Reheat in microwave or toaster oven.
