This Best-Ever Blueberry Thyme Chicken brings together juicy seared chicken breasts, a luscious blueberry-balsamic glaze, and the earthy aroma of fresh thyme the ultimate sweet-savory dinner that tastes gourmet yet comes together effortlessly.
Ingredients
4 boneless, skinless chicken breasts
1 tbsp olive oil
Salt and black pepper, to taste
1 cup fresh or frozen blueberries
2 tbsp balsamic vinegar
1 tbsp honey or maple syrup
2 tsp fresh thyme leaves (plus extra for garnish)
1 garlic clove, minced
1/4 cup chicken broth
1 tsp cornstarch mixed with 1 tbsp water (optional, for thickening)
Instructions
1. Season chicken breasts with salt and pepper.
2. Heat olive oil in a skillet over medium-high heat.
3. Sear chicken for 5–6 minutes per side until golden brown and cooked through. Remove and set aside.
4. In the same pan, add garlic and sauté briefly.
5. Add blueberries, balsamic vinegar, honey, thyme, and chicken broth. Simmer for 5–7 minutes until blueberries burst and the sauce thickens slightly.
6. (Optional) Stir in cornstarch slurry for a thicker glaze.
7. Return chicken to the pan and spoon the blueberry sauce over it.
8. Simmer for 2–3 minutes to coat.
9. Garnish with fresh thyme and serve warm.
Notes
Delicious served over mashed potatoes, couscous, or wild rice.
You can use frozen blueberries — just simmer a bit longer.
For extra brightness, add a squeeze of lemon juice before serving.
