- 4 pieces boneless, skinless chicken breasts (about 1.5 pounds total; pound to ½ inch even thickness)
- 1 cup fresh blueberries
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 3 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- ½ tsp salt
- ¼ tsp pepper
- 1 medium lemon (juice)
Instructions
- Begin by using a meat mallet to lightly pound the chicken breasts to an even thickness, about ½ inch. Season both sides with salt and pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet.
- In the same skillet, reduce the heat to medium, add the minced garlic and sauté for about 30 seconds until fragrant. Add fresh blueberries, honey, thyme, and lemon juice. Stir and let it cook for about 5-7 minutes.
- Return the chicken to the skillet, spoon the blueberry sauce over the top, and let it simmer for another 2-3 minutes.
- Remove from heat and serve warm, drizzled with the blueberry sauce.
Notes
