Ingredients
2 sheets puff pastry, thawed
2 cups fresh blueberries
1/3 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract
Zest of 1 lemon
1/4 teaspoon cinnamon
1 egg, beaten (for egg wash)
2 tablespoons coarse sugar (for sprinkling)
Instructions
1. Preheat oven to 400°F and line baking sheets with parchment paper
2. Mix blueberries with sugar, cornstarch, vanilla, lemon zest, and cinnamon
3. Roll out puff pastry and cut into 4-inch squares
4. Place 2 tablespoons filling in center of each square
5. Brush edges with beaten egg and seal corners over filling
6. Brush tops with egg wash and sprinkle with coarse sugar
7. Bake for 18-22 minutes until golden brown and bubbling
8. Cool on baking sheet for 5 minutes before serving
Notes
Use frozen blueberries without thawing, adding extra cornstarch for moisture control.
Can be assembled 4 hours ahead and refrigerated.
Freeze unbaked bombs for up to 3 months.
Reheat in 350°F oven for 5-7 minutes to restore crispiness.
