Description
A colorful, sweet-and-savory salad loaded with fresh blueberries, peaches, crumbled feta, and tossed in a bright lemon vinaigrette.
Ingredients
4 cups mixed greens
2 ripe peaches, sliced
1 cup fresh blueberries
1/3 cup feta cheese, crumbled
3 tbsp olive oil
1 tbsp lemon juice
1 tsp honey or maple syrup
Salt and pepper to taste
Instructions
1. Wash and dry the mixed greens.
2. Slice peaches into wedges.
3. Rinse and pat dry the blueberries.
4. Whisk olive oil, lemon juice, honey, salt, and pepper in a bowl.
5. In a large bowl, combine greens, peaches, and blueberries.
6. Drizzle with dressing and toss to coat.
7. Top with crumbled feta before serving.
Notes
For a nutty crunch, sprinkle chopped walnuts or sunflower seeds.
To make it vegan, substitute feta with vegan cheese and honey with maple syrup.
Best served fresh. Store undressed components separately for meal prep.
