Ingredients

  • 2 cups unsweetened almond milk
  • 1 banana (mashed)
  • ½ cup frozen blueberries
  • 2 Tbsp ground flaxseeds
  • 2 Tbsp maple syrup
  • ½ tsp pure vanilla extract
  • ⅛ tsp almond extract
  • 1 banana (sliced for topping)
  • ½ cup fresh blueberries (for topping)
  • ½ cup unsweetened coconut yogurt
  • 3 Tbsp almond butter

Instructions

  1. Combine the oats, almond milk, mashed banana, frozen blueberries, and ground flaxseeds in a medium saucepan. Bring this mixture to a gentle boil.
  2. Reduce the heat to a simmer and cook for about 7 minutes, stirring occasionally.
  3. Remove from heat and stir in the maple syrup, pure vanilla extract, and almond extract.
  4. Divide the oatmeal into bowls and top with sliced bananas, fresh blueberries, coconut yogurt, and almond butter. Enjoy!
