- 1 cup rolled oats
- 2 cups unsweetened almond milk
- 1 banana (mashed)
- ½ cup frozen blueberries
- 2 Tbsp ground flaxseeds
- 2 Tbsp maple syrup
- ½ tsp pure vanilla extract
- ⅛ tsp almond extract
- 1 banana (sliced for topping)
- ½ cup fresh blueberries (for topping)
- ½ cup unsweetened coconut yogurt
- 3 Tbsp almond butter
Instructions
- Combine the oats, almond milk, mashed banana, frozen blueberries, and ground flaxseeds in a medium saucepan. Bring this mixture to a gentle boil.
- Reduce the heat to a simmer and cook for about 7 minutes, stirring occasionally.
- Remove from heat and stir in the maple syrup, pure vanilla extract, and almond extract.
- Divide the oatmeal into bowls and top with sliced bananas, fresh blueberries, coconut yogurt, and almond butter. Enjoy!
