Description
Refreshing Blackberry Salad with watermelon, feta, and balsamic glaze perfect for summer lunches or BBQs.
Ingredients
2 cups cubed watermelon
1 cup fresh blackberries
1/3 cup crumbled feta
2 tbsp balsamic glaze
2 tbsp chopped fresh mint (optional)
Pinch sea salt
Cracked black pepper
Instructions
1. Chill all produce and feta in advance.
2. Cube the watermelon and rinse blackberries.
3. In a large bowl, layer watermelon and blackberries.
4. Top with crumbled feta.
5. Drizzle balsamic glaze over the salad.
6. Sprinkle mint, sea salt, and pepper.
7. Serve immediately or chill up to 30 mins before serving.
Notes
For a dairy-free version, substitute avocado for feta.
Best served fresh; avoid freezing.
