Instructions

1. Preheat oven to 350°F and line 9×9 inch baking pan with parchment paper

2. Combine graham cracker crumbs, melted butter, brown sugar, and salt until mixture resembles wet sand

3. Press crumb mixture firmly into prepared pan using measuring cup bottom

4. Bake crust for 10 minutes until lightly golden, remove and cool slightly

5. Beat Biscoff spread and cream cheese until completely smooth with no lumps

6. Gradually add powdered sugar, beating until fluffy and well combined

7. Beat in egg and vanilla extract until just incorporated

8. Spread Biscoff mixture evenly over baked crust using offset spatula

9. Sprinkle crushed speculoos cookies and chocolate chips over top if using

10. Bake 25-30 minutes until center is set but slightly jiggly

11. Cool completely in pan at room temperature for 2 hours

12. Refrigerate at least 2 hours before cutting into bars using parchment overhang
