Description
These Biscoff Krispie Treats transform the classic dessert with caramelized cookie butter flavor. Crispy, chewy, and ready in just 15 minutes with no baking required perfect for any occasion!
Ingredients
3 tablespoons unsalted butter
1 bag (10 oz) marshmallows
1/2 cup Biscoff cookie butter spread (smooth)
6 cups Rice Krispies cereal
1 cup crushed Biscoff cookies (8–10 cookies)
1/4 teaspoon salt
1/2 teaspoon vanilla extract
Non-stick cooking spray
Instructions
1. Line a 9×13-inch pan with parchment paper and spray lightly with cooking spray.
2. Crush Biscoff cookies in a sealed bag until you have a mix of crumbs and small chunks. Set aside.
3. Measure Rice Krispies cereal into a large mixing bowl.
4. In a large pot over low heat, melt the butter completely.
5. Add all marshmallows to the melted butter, stirring constantly for 3-4 minutes until completely smooth.
6. Remove from heat and immediately stir in Biscoff cookie butter, vanilla extract, and salt. Mix vigorously for 1 minute until fully combined.
7. Pour the marshmallow mixture over the Rice Krispies cereal and fold gently with a greased spatula until every piece is coated.
8. Fold in the crushed Biscoff cookies, distributing evenly throughout.
9. Transfer mixture to prepared pan and press gently with a greased measuring cup to create an even layer.
10. Let cool at room temperature for 1 hour (or refrigerate for 30 minutes) until completely set.
11. Lift out using parchment overhang and cut into 16 squares with a sharp knife.
12. Store in an airtight container at room temperature for up to 5 days.
Notes
For easier mixing, spray your spatula with cooking spray before starting.
Don’t overheat the marshmallows or use high heat – this creates hard, brittle treats.
Press gently when transferring to the pan. Over-pressing creates dense treats instead of light and crispy ones.
For clean cuts, wipe your knife between each slice.
You can substitute crunchy Biscoff spread for added texture, but smooth blends more evenly.
These freeze beautifully for up to 2 months when wrapped individually.
