Creamy Tuscan Butter Beans simmered in a garlicky, sun-dried tomato cream sauce with spinach a cozy, protein-rich vegetarian dish bursting with flavor.
Ingredients
2 tbsp olive oil
3 garlic cloves, minced
1/3 cup sun-dried tomatoes in oil, chopped
1 (15 oz) can butter beans, drained and rinsed
1 cup baby spinach
1/2 cup heavy cream or coconut cream
1/4 cup grated Parmesan cheese (optional)
1/2 tsp dried Italian herbs
Salt and black pepper, to taste
Fresh basil or parsley, for garnish
Instructions
1. Heat olive oil in a skillet over medium heat.
2. Add minced garlic and sun-dried tomatoes; sauté for 1–2 minutes until fragrant.
3. Stir in butter beans and season with salt, pepper, and Italian herbs.
4. Pour in cream and simmer for 3–5 minutes until slightly thickened.
5. Add spinach and cook until just wilted.
6. Stir in Parmesan cheese if using, and adjust seasoning.
7. Garnish with fresh basil or parsley and serve warm with crusty bread or pasta.
Notes
For a dairy-free version, use coconut cream and skip the Parmesan.
Add red pepper flakes for a hint of heat.
Serve as a main dish or a side to roasted chicken or fish.
