A cozy twist on the viral Marry Me Chicken this creamy soup combines juicy chicken, sun-dried tomatoes, herbs, and parmesan in a velvety broth that’s so irresistible, it might just lead to a proposal!
Ingredients
2 tbsp olive oil
1 tbsp butter
1 lb boneless, skinless chicken breasts, cut into cubes
1 small onion, diced
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 tsp Italian seasoning
1/2 tsp crushed red pepper flakes (optional)
4 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
Salt and pepper to taste
Fresh basil for garnish
Cooked pasta or rice (optional, for serving)
Instructions
1. Heat olive oil and butter in a large pot over medium heat.
2. Add chicken cubes, season with salt and pepper, and cook until golden and cooked through. Remove and set aside.
3. In the same pot, sauté onion until softened, then add garlic and cook until fragrant.
4. Stir in sun-dried tomatoes, Italian seasoning, and red pepper flakes.
5. Pour in chicken broth and bring to a simmer.
6. Reduce heat and stir in heavy cream and Parmesan until smooth.
7. Add spinach and cooked chicken back to the pot; simmer 5 minutes until heated through.
8. Taste and adjust seasoning. Garnish with basil and serve as-is or with pasta/rice.
Notes
For a lighter version, use half-and-half instead of heavy cream.
Add a dash of white wine for extra depth of flavor.
Leftovers thicken beautifully — just add a splash of broth when reheating.
