Ingredients

- 2.5 cups cooked, diced or shredded chicken
- 3 stalks of celery – about 1/2 cup diced
- 1 cup sliced grapes
- 1/3 cup chopped pecans
- 1/3 cup chopped red onion
- 1/2 cup plain Greek yogurt
- 1/4 cup mayo
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1–2 teaspoons fresh lemon zest
- Salt and pepper – to taste
Instructions
- Prep the grapes: Start by washing the grapes in a bowl with water and baking soda. Let sit for 5 minutes, rinse, and dry.
- Combine ingredients: In a medium bowl, add the rinsed and sliced grapes, cooked chicken, chopped celery, pecans, and red onion.
- Create the creamy dressing: In a separate bowl, mix the Greek yogurt, mayo, Dijon mustard, lemon juice, lemon zest, salt, and pepper until well combined.
- Combine everything: Add the creamy dressing to the chicken and vegetable mixture, and toss gently to combine.
- Serve or chill: You can serve immediately or let it chill in the fridge for a few hours before serving for enhanced flavor.
Notes
Serve on mixed greens, in a bread roll, or with crackers. Store in an airtight container in the fridge for up to 3 days.
