Ingredients

  • 3 stalks of celery – about 1/2 cup diced
  • 1 cup sliced grapes
  • 1/3 cup chopped pecans
  • 1/3 cup chopped red onion
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayo
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 12 teaspoons fresh lemon zest
  • Salt and pepper – to taste

Instructions

  1. Prep the grapes: Start by washing the grapes in a bowl with water and baking soda. Let sit for 5 minutes, rinse, and dry.
  2. Combine ingredients: In a medium bowl, add the rinsed and sliced grapes, cooked chicken, chopped celery, pecans, and red onion.
  3. Create the creamy dressing: In a separate bowl, mix the Greek yogurt, mayo, Dijon mustard, lemon juice, lemon zest, salt, and pepper until well combined.
  4. Combine everything: Add the creamy dressing to the chicken and vegetable mixture, and toss gently to combine.
  5. Serve or chill: You can serve immediately or let it chill in the fridge for a few hours before serving for enhanced flavor.
