A gourmet yet simple dish that pairs juicy pan-seared chicken with a luscious blueberry thyme sauce a perfect balance of sweet, savory, and aromatic flavors that’s sure to impress at any dinner table.
Ingredients
4 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tbsp olive oil
2 tbsp butter
2 garlic cloves, minced
1 cup fresh blueberries
1/3 cup balsamic vinegar
2 tbsp honey
1 tsp Dijon mustard
1 tsp fresh thyme leaves (plus extra for garnish)
1/4 cup chicken broth
Instructions
1. Season chicken breasts generously with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 5–6 minutes per side, or until golden brown and cooked through. Remove from pan and keep warm.
3. In the same skillet, melt butter and sauté garlic until fragrant, about 30 seconds.
4. Add blueberries, balsamic vinegar, honey, Dijon mustard, thyme, and chicken broth. Stir and bring to a simmer.
5. Cook for 6–8 minutes, stirring occasionally, until the blueberries burst and the sauce thickens slightly.
6. Return chicken to the pan, spooning sauce over the top, and simmer for 2–3 minutes to absorb flavor.
7. Serve chicken topped with the blueberry thyme sauce and a sprinkle of fresh thyme.
Notes
For a smoother sauce, mash some of the blueberries or blend briefly before serving.
Pair with roasted vegetables, mashed potatoes, or wild rice for a complete meal.
Substitute chicken thighs for a richer flavor and juicier texture.
