4 tbsp unsalted butter

1 tbsp olive oil

12 oz (340g) cremini or baby bella mushrooms, sliced

3 garlic cloves, minced

1/2 tsp salt

1/4 tsp black pepper

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1/2 tsp fresh thyme or rosemary, chopped

1/2 cup reserved pasta water

1 tbsp lemon juice (optional, for brightness)

Fresh parsley, chopped, for garnish


Instructions

1. Cook pasta in salted boiling water according to package directions until al dente. Reserve 1/2 cup pasta water and drain.

2. In a large skillet, melt butter over medium heat. Continue cooking until it turns golden brown and develops a nutty aroma (about 3–4 minutes).

3. Add olive oil and sliced mushrooms. Cook for 6–8 minutes, stirring occasionally, until mushrooms are golden and have released their moisture.

4. Add garlic, salt, pepper, and thyme, cooking for 1 minute until fragrant.

5. Pour in heavy cream and stir to combine. Simmer gently for 2–3 minutes until the sauce slightly thickens.

6. Add cooked pasta to the skillet along with Parmesan and reserved pasta water, tossing to coat evenly.

7. Add lemon juice if using and adjust seasoning to taste.

8. Garnish with fresh parsley and extra Parmesan before serving warm.
