Description
Decadent Blackberry Mascarpone Stuffed French Toast featuring thick brioche slices filled with a creamy mascarpone mixture and fresh blackberries golden, crisp on the outside, and luxuriously soft on the inside.
Ingredients
8 slices brioche or challah bread
1 cup fresh blackberries
1/2 cup mascarpone cheese
2 tbsp honey or maple syrup
1 tsp lemon zest
4 large eggs
1 cup milk
1/2 cup heavy cream
1 tsp vanilla extract
1/2 tsp cinnamon
Butter for cooking
Powdered sugar and maple syrup for serving
Instructions
1. In a small bowl, mix mascarpone, honey, and lemon zest until smooth.
2. Spread the mascarpone mixture on four slices of brioche and top with blackberries.
3. Place the remaining four slices on top to create sandwiches.
4. In a shallow dish, whisk together eggs, milk, heavy cream, vanilla, and cinnamon.
5. Dip each sandwich into the egg mixture, coating both sides thoroughly.
6. Heat butter in a large skillet over medium heat.
7. Cook each stuffed slice for 3–4 minutes per side, or until golden brown and cooked through.
8. Transfer to a plate and dust with powdered sugar.
9. Serve warm with maple syrup and extra blackberries.
Notes
Use day-old bread for best texture — it absorbs the custard without falling apart.
Try adding a drizzle of blackberry compote for extra flavor.
You can substitute cream cheese for mascarpone for a tangier taste.
