Ingredients
4 cod fillets (about 6 oz each)
Salt and pepper, to taste
1 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
1 cup coconut milk (full-fat)
1/4 cup heavy cream (optional for extra richness)
2 tbsp lemon juice
1 tsp lemon zest
1/2 tsp Dijon mustard
1/4 tsp red pepper flakes (optional)
2 tbsp fresh parsley or cilantro, chopped
Lemon slices, for garnish
Instructions
1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
2. Season cod fillets with salt and pepper on both sides.
3. In a skillet, heat olive oil and butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
4. Stir in coconut milk, heavy cream (if using), lemon juice, zest, Dijon mustard, and red pepper flakes. Simmer for 2–3 minutes.
5. Pour the sauce into the prepared baking dish and nestle the cod fillets into the sauce.
6. Bake for 15–18 minutes, or until fish flakes easily with a fork.
7. Spoon sauce over the top and garnish with parsley and lemon slices before serving.
Notes
Serve over rice, quinoa, or steamed vegetables for a complete meal.
Substitute halibut, tilapia, or salmon for cod.
For a dairy-free version, omit the heavy cream — the coconut milk alone creates a silky texture.
