- 1 pound ground beef
- 1 can black beans, drained and rinsed
- 1 cup cooked rice
- 1 cup shredded cheese
- 4 large flour tortillas
- 1 cup chipotle sauce
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional toppings: sour cream, salsa, avocado, cilantro
Instructions
- Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned. Drain any excess fat.
- Stir in black beans, cooked rice, cumin, garlic powder, salt, and pepper; cook until heated through.
- Lay out the flour tortillas and fill each with the beef mixture, cheese, and chipotle sauce.
- Roll the tortillas tightly to enclose all the filling.
- Place the burritos seam-side down in a baking dish.
- Pour the remaining chipotle sauce over the burritos and sprinkle with more cheese if desired.
- Cover the dish with foil and bake at 350°F (175°C) for 20 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is golden.
- Serve warm with your favorite toppings!
Notes
These burritos can make excellent leftovers! Store them in an airtight container for up to 3 days in the fridge or freeze them for 2-3 months.
