Description

Delicious and hearty beef burritos filled with smoky chipotle sauce, black beans, and melted cheese, perfect for family gatherings or casual get-togethers.


Ingredients

  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 cup shredded cheese
  • 4 large flour tortillas
  • 1 cup chipotle sauce
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, salsa, avocado, cilantro

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned. Drain any excess fat.
  2. Stir in black beans, cooked rice, cumin, garlic powder, salt, and pepper; cook until heated through.
  3. Lay out the flour tortillas and fill each with the beef mixture, cheese, and chipotle sauce.
  4. Roll the tortillas tightly to enclose all the filling.
  5. Place the burritos seam-side down in a baking dish.
  6. Pour the remaining chipotle sauce over the burritos and sprinkle with more cheese if desired.
  7. Cover the dish with foil and bake at 350°F (175°C) for 20 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is golden.
  8. Serve warm with your favorite toppings!

Notes

These burritos can make excellent leftovers! Store them in an airtight container for up to 3 days in the fridge or freeze them for 2-3 months.
