- 2 tablespoons Sesame seeds (For garnish)
- 1/2 cup Mayonnaise (Optional: substitute with non-fat mayonnaise or Greek yogurt)
- 1/4 cup Sweet chili sauce
- 1–2 tablespoons Sriracha (Adjust according to spice preference)
Instructions
- Start by cutting the chicken breasts into bite-sized pieces.
- Mix the cornstarch, salt, black pepper, garlic powder, and paprika in a bowl.
- Dredge the chicken pieces in the cornstarch mixture until they’re well coated.
- Heat the vegetable oil in a large frying pan over medium-high heat.
- Add the coated chicken pieces in batches and fry until golden brown and cooked through, about 5-7 minutes.
- Remove and set on a plate lined with paper towels.
- Prepare the sauce by mixing mayonnaise, sweet chili sauce, and Sriracha in a bowl until smooth and creamy.
- Assemble your bowls with cooked jasmine rice as the base, topped with shredded lettuce, diced cucumber, shredded carrots, and chopped green onions.
- Add the crispy chicken and drizzle with the creamy sauce.
- Finish with a sprinkle of sesame seeds and serve.
Notes
For extra crunch, let the coated chicken rest for a few minutes before frying. Use a thermometer to ensure the oil is at the right temperature for frying.
