Ingredients
4–6 large ripe bananas (firm but yielding)
2 tablespoons fresh lemon juice
2 teaspoons ground cinnamon
3 tablespoons granulated sugar
1/4 teaspoon kosher salt
1 tablespoon coconut oil, melted (optional)
Instructions
1. Preheat oven to lowest setting (170-200°F) and line baking sheets with parchment
2. Slice bananas into uniform 1/8-inch rounds using sharp knife or mandoline
3. Immediately toss sliced bananas with lemon juice to prevent browning
4. Combine cinnamon, sugar, and salt in small bowl for coating mixture
5. Arrange banana slices in single layers on prepared baking sheets without overlapping
6. Lightly brush with melted coconut oil if using
7. Sprinkle cinnamon-sugar mixture evenly over both sides of each slice
8. Bake for 2-3 hours, flipping every 45 minutes for even dehydration
9. Test for doneness – chips should snap cleanly when bent and feel completely dry
10. Allow to cool completely on baking sheets before storing
11. Store in airtight containers for up to 2 weeks at room temperature
