Description
Balsamic Glazed Pork Tenderloin with roasted veggies is tender, juicy, and packed with flavor perfect for weeknights or special dinners.
Ingredients
1 lb pork tenderloin
1/4 cup balsamic vinegar
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp honey or maple syrup
1 tsp dried rosemary
Salt and pepper to taste
2 cups assorted vegetables (carrots, zucchini, potatoes)
Fresh herbs for garnish
Instructions
1. Preheat oven to 400°F (200°C).
2. Trim pork and pat dry. Season with salt and pepper.
3. Sear pork in hot skillet 2-3 minutes per side.
4. Mix balsamic vinegar, olive oil, garlic, honey, and rosemary for glaze.
5. Brush pork with glaze and roast with vegetables 20-25 minutes.
6. Check internal temperature: 145°F (63°C) for pork.
7. Rest pork 5-10 minutes before slicing.
8. Serve with roasted veggies and garnish with fresh herbs.
Notes
Substitute pork tenderloin with chicken or turkey tenderloin.
Add crushed red pepper for a spicy variation.
Freeze cooked slices for up to 3 months in airtight containers.
