Description
One Pan Balsamic Chicken and Veggies is a fast, juicy, and flavorful dinner solution. Roasted chicken and caramelized vegetables all on one sheet pan!
Ingredients
1.5 lbs boneless skinless chicken thighs or breasts
1/4 cup balsamic vinegar
2 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp honey
2 garlic cloves, minced
Salt and pepper
3 cups chopped vegetables (broccoli, bell peppers, carrots, zucchini)
Extra olive oil for veggies
Instructions
1. Preheat oven to 425°F and line a baking sheet with foil.
2. Whisk balsamic vinegar, olive oil, Dijon, honey, garlic, salt, and pepper.
3. Marinate chicken in mixture for 15–30 minutes.
4. Toss veggies with oil, salt, and pepper. Spread on one side of sheet pan.
5. Place chicken on other side. Roast 25–30 minutes.
6. Broil final 2 minutes for caramelization. Rest 5 minutes and serve.
Notes
Use parchment paper for easier cleanup.
Swap veggies based on season or preference.
Store leftovers in airtight container up to 4 days.
