  • 2 tbsp olive oil

  • 1 tsp dried oregano

  • Salt and pepper, to taste

  • Fresh basil or parsley for garnish (optional)


Instructions

  • Preheat the oven to 375°F (190°C).

  • Lightly grease an oven-safe baking dish with 1 tbsp olive oil.

  • Spread cherry tomatoes, spinach, and minced garlic evenly in the dish.

  • Crack the eggs gently over the vegetables, spacing them evenly.

  • Sprinkle crumbled feta cheese over the eggs and vegetables.

  • Drizzle the remaining olive oil over the top, then season with oregano, salt, and pepper.

  • Bake for 12-15 minutes until the egg whites are set but yolks remain slightly runny.

  • Remove from oven and let rest for 2 minutes. Garnish with fresh basil or parsley if desired.
