Ingredients
200g feta cheese, crumbled
4 large eggs
1 cup cherry tomatoes, halved
1 cup fresh spinach, chopped
2 cloves garlic, minced
2 tbsp olive oil
1 tsp dried oregano
Salt and pepper, to taste
Fresh basil or parsley for garnish (optional)
Instructions
Preheat the oven to 375°F (190°C).
Lightly grease an oven-safe baking dish with 1 tbsp olive oil.
Spread cherry tomatoes, spinach, and minced garlic evenly in the dish.
Crack the eggs gently over the vegetables, spacing them evenly.
Sprinkle crumbled feta cheese over the eggs and vegetables.
Drizzle the remaining olive oil over the top, then season with oregano, salt, and pepper.
Bake for 12-15 minutes until the egg whites are set but yolks remain slightly runny.
Remove from oven and let rest for 2 minutes. Garnish with fresh basil or parsley if desired.
