Ingredients
1 wheel brie cheese (6–8 inches, about 1 lb)
⅓ cup fig jam or preserves
½ cup pecans, roughly chopped
2 tablespoons honey
1 tablespoon fresh thyme leaves
¼ teaspoon salt
Pinch of black pepper
Optional: 1 sheet puff pastry for wrapping
For serving:
Assorted crackers
Sliced baguette

Instructions
1. Preheat oven to 350°F (175°C) and line small baking dish with parchment paper.
2. Remove brie from packaging and let come to room temperature for 30 minutes.
3. Place brie wheel in prepared baking dish.
4. Using sharp knife, lightly score top rind in crosshatch pattern about ¼ inch deep.
5. Spread fig jam evenly over scored surface.
6. Sprinkle chopped pecans over fig jam.
7. Drizzle with honey and season with fresh thyme, salt, and pepper.
8. Bake for 12-15 minutes until cheese feels soft when pressed and edges bubble slightly.
9. Let rest for 5 minutes before serving.
10. Serve immediately with crackers, baguette slices, and fresh fruit.
Notes
Remove cheese from refrigerator 30 minutes before baking for even heating.
Don’t overbake – cheese can go from perfect to overcooked quickly.
Score rind deep enough for toppings but not through the entire wheel.
Can be assembled 4 hours ahead and baked just before serving.
Serve immediately while cheese is perfectly melted and warm.
